Prawn & Mango Salad - Forest Feast

Prawn, Mango and Pomegranate salad


Serves 4
400g fresh cooked & peeled prawns
1 small red onion
1 bag mixed salad leaves
200g Forest Feast Mouth-Watering Mango
50g Forest Feast Perfect Pomegranate
½ Mild chilli
Handful of fresh mint
Handful of coriander leaves


3 tablespoons virgin olive oil
1 tablespoon lime juice
1 tablespoon honey


  • Thinly slice the red onion, the Mouth-Watering Mango and the chilli.
  • Place in a large salad bowl along with the rest of the ingredients.
  • Make the dressing by whisking the olive oil, lime juice and honey together.
  • Pour the dressing over the salad and serve with warm crusty bread.
