
Prawn, Mango and Pomegranate salad
Ingredients
Serves 4
400g fresh cooked & peeled prawns
1 small red onion
1 bag mixed salad leaves
200g Forest Feast Mouth-Watering Mango
50g Forest Feast Perfect Pomegranate
½ Mild chilli
Handful of fresh mint
Handful of coriander leaves
Dressing
3 tablespoons virgin olive oil
1 tablespoon lime juice
1 tablespoon honey
Method
- Thinly slice the red onion, the Mouth-Watering Mango and the chilli.
- Place in a large salad bowl along with the rest of the ingredients.
- Make the dressing by whisking the olive oil, lime juice and honey together.
- Pour the dressing over the salad and serve with warm crusty bread.
